Mesquite Creek Wagyu is locally raised Wagyu, here in North Texas. Wagyu is a Japanese beef cattle breed. The name WAGYU refers to all Japanese beef cattle, where 'Wa' means Japanese and 'gyu' means cow. Wagyu beef is distinctive because it is highly marbled. Marbling refers to the visible layers of intramuscular fat, which is fat that is found in the muscle. Due to the unique genetics of these cows, the meat contains a higher percentage of fatty acids than ordinary beef, giving it a higher marbling score. The higher the marbling score, the more flavorsome, tender and juicy the meat is. Wagyu beef contains a higher percentage of omega-3 and omega-6 fatty acids and more monounsaturated fats than other beef. This soft fat has a low melting point and not only creates the wonderful texture and flavor of Wagyu beef but is also the reason Wagyu beef has so many health benefits!
